Broast Chef
Description
We are looking for an experienced Broast Chef who specializes in preparing high quality broasted chicken with consistent taste, crispiness, juiciness, portioning, and presentation. The chef must have practical experience in marination, coating, frying, oil management, and kitchen hygiene.
Key Responsibilities
Prepare and marinate chicken according to the restaurant's recipe and SOP.
Prepare and maintain broast coating/flour mixture with consistent seasoning.
Operate pressure fryer/broast fryer safely and correctly.
Maintain correct frying temperature, pressure, cooking time, and batch size.
Ensure chicken is crispy outside and properly cooked/juicy inside.
Control oil quality, filtration, and replacement.
Maintain consistency in taste, color, coating thickness, and portion size.
Prepare garlic sauce and other broast sauces according to standardized recipes.
Control chicken wastage and minimize food cost.
Check chicken quality before preparation and reject poor-quality stock.
Maintain proper FIFO and food-storage practices.
Keep the broast station clean and organized throughout the shift.
Follow all food safety and hygiene requirements.
Coordinate with the kitchen team to ensure orders are prepared quickly during peak hours.
Train junior kitchen staff in broast preparation when required.
Follow standardized recipes without changing ingredients or quantities without management approval.
Monitor daily stock of chicken, flour, oil, spices, sauces, and packaging.
Report equipment problems, quality issues, wastage, and shortages to management immediately.
Requirements
2–5+ years of professional broast experience preferred.
Must have hands on experience with pressure frying/broasting.
Experience working in a busy restaurant is preferred.
Strong understanding of chicken marination and coating.
Able to maintain consistent quality during high-volume service.
Good knowledge of kitchen hygiene and food safety.
Able to work under pressure during peak hours.
Must be disciplined and follow recipes/SOPs exactly.
Kerala / South Indian candidates are preferred, particularly candidates with proven experience working in broast restaurants.
Previous experience in Saudi Arabia/Jeddah is an advantage.
